I love my mom dearly. She’s been great to me over the years. But, she is one of the most prideful women I have ever met. After getting new carpet installed, I called to check in on my parents and ask how they were doing. While speaking to my mom, it became apparent that they needed help getting the house put together again. Of course, my mom refused to ask for help, and was hesitant to receive help, even when I insisted. Before I left to help my parents, per my wife’s instructions, I through a lasagna in the oven for dinner. About an hour into helping my parents, my dad asked if my family and I were interested in going out to dinner. My mom quickly interjected that I couldn’t because I was making a home-made lasagna.

Helping my parents took a bit longer than I expected. I got home, starving, and quickly gobbled down a large piece of cold lasagna. It was delicious. It didn’t matter that it had been sitting out for hours waiting for me. In fact, it was so delicious that I thought I should share the recipe with you.
